Musée Du Chocolat Théobroma, Diable

Sunday, I started with this small item, which I got as my 4(+1 for a cake-off win)th cake from Musée Du Chocolat Théobroma, though most past purchases have been via their Cocoa Store shop nearer Yoyogi Park. This is Diable and is just what it looks like, chocolate custard on a chocolate puff pastry. It was definitely good, which is both better than I expected of the item just based on the concept and actually the second best "cake" I've had from this shop, so I was satisfied.

La Précieuse, Montelimar and Waguri Mont-Blanc

Though it doesn't feel so long ago now, last Saturday I got a couple cakes for two from one of the shops on my quite fine group, La Précieuse on the north side of the Yotsuya Station building. I got the take-out, though they have a café space that I've used before. My choice was Montelimar, since I've had good luck with at least one cake of that name, and I like pistachio (hard to see in the picture, but the bottom is pistachio cream) and I think the top is mousse with honey and fruit. It was good.
The other cake was the Waguri (domestic chestnut) Mont-Blanc. The sign says that you have to wait a couple minutes, because they make them fresh, but I think they didn't take so much time in the backroom. It also was good and had a meringue base, if I'm remembering correctly. So it's definitely a fine shop, but will get cut if I every manage to do a cut (I'm running out of shops to test, so it will probably depend on whether I add any new shops that make it to that level).

Café Mikuni's, Savarin Fleur d'Orange

The other Café Mikuni's cake from last weekend that I shared was a Savarin Fleur d'Orange. I assume the bottom was somehow the savarin, as it was rather mellow but not obviously alcoholic or orange. Actually, the whole thing is not a strong orange, or at least a strongly citreous orange, maybe a blood orange? Anyway, it was also definitely good, which is a pretty good rating for a glass dessert presented as cake.

Presqu'île Chocolaterie, Mont-blanc

Having brought Presqu'île Chocolaterie, a quite fine shop, up to the target 4th cake level, I went back the next day to get one cake ahead with them on the grounds that it could be years before they come back to Isetan (whereas normally they are inconveniently far from central Tokyo). I went with the only cake of theirs that has no chocolate at all, the Mont-Blanc. The unique feature for me was the base, which has pastry more like what I only see with quiche: salted filo crust. Inside the base is almond cream. It's definitely excellent even among the crowded category of mont-blanc.

Atelier Kohta, Shortcake and Tarte Tatin

After verifying that Pierre Gagnaire wasn't going to give me a new cake Wednesday morning, I walked and ran with an umbrella down to Paris S'éveille Thursday morning (this time taking half-day off work), which hasn't changed it's new cakes, though the recent new cakes are excellent. I came back by train to Atelier Kohta, but I went to the wrong location and had another 1.5 km to walk, plus it isn't close to the station I wanted to come back, so maybe half that again, besides the final walk, so I had an active morning.

I actually owed them for a cake-off, plus the whole category is about to get reviewed, so I got two cakes to be efficient. Actually, there wasn't much choice, though there was also a tiny tart that I suppose would count as a cake. When I got was the Shortcake and the Tarte Tatan. I've learned to appreciate shortcake, and I guess I was in the mood for whipped cream, as I decided that it deserved an excellent rating.

The Tarte Tatin had so much cinnamon on top, that I could really see how to eat it to balance that out without a lot of drink, but I don't want to rate it too low, because I accidently left it out on the counter for a few hours (and put it back for a couple hours before eating), so it obviously wasn't in peak condition. Still, I can't see how that would change my appreciation of the amount of cinnamon, so I'm going to rate it as good, which sort of balances out the first. This shop should remain in the quite fine category, I think.

Jun Honma: Waguri Mont-Blanc

Still trying to sort out the quite fine shops versus the exceptional shops, I ran to Jun Honma again. I didn't get turned around 180 degrees again, but I also didn't pick my route that well, so it took about the same time. Actually, coming back with cake took the same time, and I walked under Shinjuku as far as Isetan. Takes a couple hours total.

I went with the Waguri Mont-Blanc this time, very traditional. And it was very traditional tasting, so good but nothing special, so Jun Honma slips behind, giving a different shop a chance for the next day. I'll say that this had a sort of almond tart base, since besides using Japanese Chestnuts, the base classifies it within the Mont-Blanc family.

Coffee Parlor Hilltop: Laque Noir

The night of Christmas Day, I ran to Coffee Parlor Hilltop, where they had their normal cakes and no crowd, though some one came after me to buy, so they are getting some customers since reopening. This time and was more energetic and ran all the way back. As my cake, I choose Laque Noir, because it looked great, even if the composition is not very promising for me. Namely chocolate mousse, with fruit (potentially too much), and with a chocolate glaze. I dealt with it though. I look chocolate, and mousse, though just mousse can be a texture problem. I chilled it down to 1 degC, so it least started out sufficient firm to be control able. I also avoided putting the glazing directly on my tough, since I was correct that I was not appreciating the Laque(r) part of it, but it worked fine how I ate it. And the orange was not too much and harmonized fairly gently with the chocolate. I'm rating it excellent, so this shop is in good shape to get promoted. There are a couple shops already in the exceptional group that I'd like to hit first though, so I can wait for the sixth cake.

Noix de Beurre: Meringue Chantilly

Today was no running due to having gotten a flu shot, so to reward myself for not running when I shouldn't (or really, because it was somewhere I could go with minimal effort), I visited another quite fine shop which I've had just one great cake from, Noix de Beurre, at Isetan. This time I got Meringue Chantilly, which is exactly what the name says and it looks like: meringue with whipped cream. The center meringue is actually dense (and took some work to get through, but the outside part is light enough as a guide). It's good (and cheap) but not enough to convince me that this shop needs to be promoted. I've got room to promote two shops, and one might be Coffee Parlor Hill Top (when and if they reopen in December), but there's a three-way tie even after that.

Pièce Montée: Fromage Cru

Monday, I ran some revised neighborhood loops, only semi-successfully. The Minami-Aoyama east loop was successful clockwise and the Minami-Motomachi--Moto-Akasaka loop was successful counterclockwise, only I decided to change it on the fly, so now I need to run it clockwise again. Also, since now I'm allowing links through subway access tunnels, I should had a Kita-Aoyama east loop (which has at least part of the park-like part of Meiji-Jinguu Gaien, as well as a children's park on the public housing side, but it was the return of Starbucks that really triggered my considering it (there is also a Japanese confectionery, which I may or may not included, depending my next look in the shop when it's open). So I'm adding nearby loops I need to do faster than I can catch up back to expanding outward. No cake that day, but I was feeling like pizza and tried some place that I won't bother to name. Not the worst, but probably never need to go back.

Tuesday was an indoor workout day, so I just used a bicycle to go to
Pièce Montée to get a 5th cake, to try to resolve the boundary between exceptional and quite fine shops (it's the shops with just one great cake that are the problem). Since I've had luck with them lately (and the selection is pretty small), I went with Fromage Cru. Workout went fine, as the did the cake. I'm rating this as definitely good: very nice balance of raspberry (there's filling) and cheesecake, but simple, with a tart base. Note sure that I got the "feather" and the raspberry back in the correct locations after I got it home, but seems somewhat reasonable.
